brain food! apple buttermilk pancakes.


We are in state testing mode right now. And when Luke requested something protein friendly (um, bacon) - a breakfast including protein not a typical request for him... well, I agreed and had enough time to try this recipe in Martha Stewart in the latest issue of "Everyday Food". It has been a super issue! I've already tried several recipes and most of us have liked them. It's worth purchasing if you haven't already. Some really good crock pot options that aren't the same-old thing.

Apple buttermilk pancakes
(serves 4)-Martha Stewart "EveryDay Foods"

-1 cup flour
-1 tablespoon sugar
-1 1/4 tsp. baking powder
-1/4 tsp. baking soda
-1/4 tsp. fine salt
-1 cup buttermilk
-1 large egg
-1/2 cup applesauce
-1 apple cut up (small chunks)
-1 tablespoon unsalted butter, melted

Mix the dry ingredients in a large bowl. Mix the buttermilk, egg, applesauce, melted butter and chunked apple in another medium bowl. Pour wet ingredients into the dry. Mix (do not over mix though). And cook on the griddle (mine was around 325 F.)

and I doubled the recipe (everything but the apple sauce) - they are nice and thick!

  1. Oh these sound lovely, we only make the thin flat type of 'pancake' (or crepe maybe to you?!) and I keep thinking I'd like to make American style ones for the boys - might give this recipe a go. Bethx
