cheese bread stick recipe

I have been making these bread sticks for almost 10 years now. I found the original recipe in the "2000 Taste of Home Cookbook" and they have been eaten many, many times since. I think the recipe is worthy of a post.

They call for quick rise yeast so they are perfect to dress up a pasta meal in a hurry.

Cheese bread sticks
2 1/2 c. unbleached all-purpose flour
1 tsp. salt
1 tsp. sugar
1 Tablespoon quick rise yeast
1 c. warm water
1 tablespoon olive oil

topping:
1/4-1/3 c. italian salad dressing
1/4 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. dried oregano
1/4 tsp. thyme
dash freshly ground black pepper
2 tablespoons parmesan cheese
1 c. mozzarella cheese (shredded)

In a bowl, combine the first four ingredients. In a small bowl combine water and oil; then add to the flour mixture. Turn onto a floured surface and knead for 1-2 minutes or until smooth and elastic. Pour a slub of olive oil (or olive oil spray) into a bowl and put the dough into the bowl, turning once to oil all sides of dough. Cover and let rise in a warm place for 20 minutes. Punch the dough down, place on a greased 12-in. pizza pan or stone and pat or roll it to meet the edges of the pan. Brush with dressing and sprinkle with the remaining seasonings and parmesan cheese (mix them in a bowl together before hand) Spread the mozzarella over the top. Bake at 450 F for 15 minutes or until golden brown. Serve warm.
