Merry Christmas Eve!

We always celebrate Christmas morning with cinnamon rolls and a happy birthday to Jesus sound. This year, 3 of the four kids can play the happy birthday song on the piano - so cool.

Today full of last minute grocery shopping, food and cookie preparation and one more hat to knit. I was waiting until my last minute order of yarn from Brooklyn Tweed's Shelter to come in. It arrived yesterday! All but two or three gifts to wrap up still - I'm getting there. How about you? Best wishes to getting everything wrapped and baked. Have a merry Christmas Eve!


*One more quick recipe. A total cheat...
oreo balls
1 8 oz. bar cream cheese, softened
1 bag oreos, crushed
1 bag semi-sweet chocolate chips or 1 heaping cup bittersweet chips
1/4 c. heavy cream
Mix the the two together and shape into 1 in. balls. Refrigerate about 1 hour. Melt either 1 bag semi-sweet chocolate chips or 12 oz. white chocolate with the cream or just make a ganache** and roll the balls in. This year we might try sprinkling some "sprinkles" on them before the chocolate hardens. Refrigerate until ready to eat.

(I originally posted to just melt chocolate, after making them again this morning and using ghiradelli chips, I realized I needed heavy cream to get it to a better consistency.)

**for ganache. heat the cream in a small pan. Don't let it reach a boil. Remove from stove top and pour over the bittersweet chips/chunks in a ball and let set for 1 minute. Then stir smooth.

  3. We do the oreo balls too, but I did it with the cream colored oreos and cream cheese mixed, roll into balls, dip in white chocolate and sprinkle with cocount..MMM..Merry Christmas Casners!! Love the pics!
